Toasted Vanilla Protein Muesli

I have been wanting to try this for awhile now but I actually wasn't sure it would work or that I would enjoy the taste or texture, but wow was I surprised! I love it! The protein adds a little sweetness and when mixed with yoghurt or oat milk it's super yum! I even catch myself scooping handfuls as an afternoon snack!

INGREDIENTS

1 cup organic whole oats

2 cups puffed buckwheat

1/2 cup apricot pieces

1 cup shredded coconut

1/2 cup raisins, sultanas or currants 

1 cup sunflower seeds

1/2 cup chia seeds

1/2 cup cranberries

1/2 cup chopped walnuts

2 teaspoon cinnamon

2 teaspoon mixed spice

1 tablespoon coconut sugar

1/4 cup vanilla protein powder

1/2 cup maple syrup (or rice bran syrup)

METHOD

1. Mix throughly to combine.

2. Preheat 160 degrees celcius

3. Grease an oven tray with one tablespoon coconut oil and bake at 160 degrees celcius for 30 to 40 min or until browned. Stir a couple of times throughout the cooking period, note the longer you bake the crunchier it will become but be careful not to burn your fruits.

4. Cool and stir to loosen if stuck together and store in an airtight jar.
